Surprise Muffins

We love muffins here at our house.  Any kind of muffins.  Anyway, today Miriam was planning on making chocolate chip cookies but we were out of sugar.  Gasp!  If you buy stuff in bulk it's always a shock when you find you've run out of something.  So, she decided to make Surprise Muffins that don't have any sugar in them except for the jam which we had on hand.  We've made these a lot over the years because we pretty much always have everything on hand and they're nice and moist.  If you put the jam just right it gives you a surprise when you bite into them.  For some reason the picture got a little distorted when I downloaded it.  Oh well.  For those that want to make these, here's the recipe: (we triple it because it only makes 12)

Put in bowl:
2 Cups flour
2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt

Combine and add:
2 eggs
3/4 cups apple juice
1/2 cup peanut butter, smooth or chunky
1/4 cup milk
3 Tbsp. melted butter

Mix just until moistened.  Put in greased muffin pan.  Put one half of the dough in the pans and then 1-2 teaspoons jam on, and cover with the rest of the dough.  Bake at 350 degrees for 15 - 20 minutes or till done. Makes 12 large muffins.

  2. We love muffins too and also happened to be out of sugar, so we tried this recipe. It was very tasty and quite healthy too! They have been christened "peanut butter and jelly muffins" at our house. It was fun trying something new. Thank you for sharing!
